Empanadas

1 pound ground beef

1 medium onion, chopped

2-3 cloves garlic, minced

1 packet or cube chicken bouillon

1 packet Sazón Goya (Culantro y Achiote) It’s an orange box in the hispanic food section.

1 tomato, diced (can use canned, just drain it thoroughly)

1/4 cup raisins

6 eggs, hard boiled

12 green olives, pitted

pastry crust

 

1. Cook the beef, onion, and garlic over medium heat until beef is brown and crumbly.  Add seasoning, tomato, and raisins.  Cook 2-5 minutes.

2. Roll out pastry crust to 1/8-1/4 inch thick.  Cut into circles about 6 inches diameter.  Fill with beef mixture, half an egg, and one olive.  Fold circle over and seal the edges.  Place on ungreased cookie sheet.

3.  Bake 425 degrees 12-15 minutes or until golden brown.
